Although biscuit making seems an easy task, it is actually quite complicated. Nathalie Dupree has exposed the secrets of making the perfect biscuit. Highly recommended book.

Perfectly adequate introduction to southern-style biscuits, but most of the recipes appear to be simply cut-and-pasted from one another. (The fact is, most of the recipes are nearly identical, with few variations).

I'm somewhat experienced in making delicious Southern biscuits, but this book has definitely upped my game! It's amazing how little tweaks in amounts and ingredients can make such differences in biscuit tastes, textures, appearances, etc. I highly recommend this to any biscuit baker. . . even if she or he thinks she or he is already a pro.

I have been surrounded by Natalie Dupree's books ever since I ate crepes in her first restaurant in an antique store (more like a barn) near Atlanta, Georgia when we were both spring chickens. When I did not live in the South I drooled over her "Southern Memories" while homesick. When I lived in Europe my friends had to smuggle sweet potatoes in their luggage for Sweet Potato Pie.
I have baked biscuits now and then but, as a European, I prefer yeast breads, however this book is so charming that I will start baking biscuits again, if only to share them with my neighbors.

The one recipe I could have done without is "Buttermilk Margarine Biscuits". Margarine? Honestly, Natalie, what were you thinking?
