This cookbook has changed keto for me! I love the triple chocolate and peanut butter ice creams. No more "cheating" on the diet with Halo top for me. This beats Halo top any day!!

I've used Carrie's older ice cream cookbook too and they are both fantastic! Now that we've gone keto, it only made
sense to get this one. It's not disappointed us at all! I've tried the cinnamon, pumpkin spice latte, triple chocolate, and
the peanut butter and all are fantastic. Yes, some do take a little more time, but well worth the treat factor! How fun to
make sugar free marshmallows!!!!
Certainly, if you don't care for xylitol or can't use xylitol, this is not the book for you. Some recipes do have items that
you'd probably have to order online, but for those of us that love to try new things and experiment in the kitchen, this
is the book for you. I'm confused how one reviewer, cut the book down, but loved the resulting ice cream. This IS
really good ice cream and keeps us on the right track! Win, win!

I'm loving working my way through this book. The hardest part was just reading the first steps on how it all works. Once I made the first batch, I now can easily and quickly make new ones anytime. I love being able to make ice cream myself, which keeps me from eating too much. I also love not feeling guilty about eating ice cream at all.
So far, I've made 4 kinds and all have been great! My favorite has been the Pumpkin Spice Latte ice cream. The coconut one needed a little bit something extra, like a few chocolate chips on top. Next time, I'll make the coconut with chocolate nibs mixed in.
Tip: I bought a barely used ice cream maker from someone off of FB marketplace for $5. Garage sales work too. People seem to get them as wedding gifts and never use them.

I asked the writer if I could replace the guar gum with anything else. She declined to answer because it would have meant returning the book. I found just today on her website on a different page that NO SUBSTITUTIONS for guar would work. I have a terrible reaction to guar. Now I have NO USE for this book. I wasted $25.

I just got this book in the mail - so haven't made any of the recipes yet. First, the ice cream flavors look really yummy. My issue comes with the fact that she uses Xylitol in every single recipe and states that no substitutions can be made. Some folks steer clear of Xylitol (I am one). It would have been nice if author had experimented with how to make ice cream with Stevia, etc. Also, a few more recipes with eggs would have been a plus. Had I known you must use Xylitol - I wouldn't have purchased the book. Guess I'll do my own experimenting with Stevia & eggs.
