I have the Cook's Essential version but it appears to be the same unit as this one. It has two settings, high (to melt the chocolate) and low (keeps it at the perfect temperature for dipping/fondue/frosting making). Better than a double boiler, no water to spit up and cause the chocolate to seize. Better than the microwave since it will not burn the chocolate. You put the chocolate in and do not need to watch it closely, so it frees you up to do other things. Once melted turn to low and the chocolate stays at a perfect consistency.

I've actually bought two of these units. One for white & one for dark chocolate. They melt the chocolate perfectly for dipping and maintain it at the correct temperature for hours. We use it to make things with but have also used it on a dessert bar at holidays. Super little units. The first one I've had years and it's still going strong.
