Ok. I love eggplant, but this doesn't have too much flavor on it's own, and is mushy as some have noted, not nice slices. I'm looking for more recipes because I believe it will be good in things Mediterranean salads and dishes like a vegetable strata with layers of veggies, and also to stuff a roasted portabella mushroom, spiced for shakshuka with egg baked on top, etc.
I prefer to drain the oil by placing the product into a colander and place the colander over a bowl (and a heavy can on top). Leave it for a few hours or over night. I think at least half to 3/4 of the oil drains out (30 of the 40 grams in the can) and then it's much healthier and relatively low fat, too.
