Bought a set of these pans after seeing them featured on ATK and like most of ATK's recommendations, these didn't disappoint. They're very versatile and naturally nonstick, so they can take virtually anything you throw at them once they've been properly seasoned. The one thing I've noted they don't stand up very well to, even for very short durations, is acidic liquids like wine reductions and tomato sauces. ATK's reviews suggest they can take such abuse as long as it's not for excessively long cooking, e.g. braising. Well mine lose their seasoning for even the quickest sautes. I don't mind however since that comes back immediately with repeated use. A more serious gripe is their weight. Ok, they're not quite as heavy as cast iron, but they are still pretty darn heavy, especially the larger pans. These are minor nuisances. Overall I really enjoy cooking on these pans. They perform in a class above common cookware, they're pretty easy to care for once you take a minute to learn how, and they're affordable. Makes for all around great gear to own if you're a cooking enthusiast.

I seasoned this really really well first with the salt/potato peelings, and then in the oven. Make sure you don't leave a heavy coating of oil - just a thin coat for the oven seasoning. I fry up eggs in butter with no sticking problem whatsoever. You only need medium to a little medium high heat. Don't rush it. The handle gets warm but not too hot to handle during my egg cooking time. I seriously love that this pan has no teflon and doesn't stick!
The protective coating others have mentioned? Yes, it's a pain in the neck to get off. I might try soaking in warm water a bit before scrubbing next time. And yes, there is going to be a next time because I just ordered a bigger fry pan to replace my old worn out teflon one. Goodbye teflon! Yay!

I have been considering buying a steel frying pan for a very long time, but never got around to it. A few weeks ago we were at a friend's house for dinner and he was using one. He said it worked great and really liked it. So the next day I ordered one (11 7/8"). I have now been using it for several weeks am totally blown away by its performance. It browns meat way better than cast iron or my All-Clad copper core (which thought nothing could out perform) and nothing sticks! Last night I sauteed a cut up chicken. The recipe called for browning the chicken skin-side down for 10 minutes. I actually had too much chicken for the size of the pan, so I had to crowd it pretty tight. I just "knew" there was no way the skin would be browned adiquately in 10 minute - but it was and perfectly! I am so sorry I waited so long to own one of these! I intend to buy two more, one larger and one smaller. Don't wait, you will be sorry once you have one.

I was always interested in cooking and lately Ive had a fascination with cookware, I bought a few stainless steel pans, then i bought a cast iron pan, and now its on to this pan!

I seasoned the pan on how i seen a couple videos on YouTube, i couldn't do it the way the manufacture said cause i did not have any potatoes, but after a few rounds of seasoning the pan came really dark and really slick! i fried my first egg on it and it stuck in a few places, but i think it did cause the pan wasn't up to temp. Then i tried frying Portuguese sausage and a omelette and WOW, slick as ICE. Out of all the pans that i have bought, this one makes me want to cook more!

The pan was heavier than i thought it would be but nothing to cumbersome, and definitely not as heavy as a cast iron pan. I like that the inside of the pan where the handle attaches are no rivets sticking out on the inside, its just smooth. Pan looks to be made really well, Love the thing so far.
