If you need "quark" this is a great substitute. The other day I bought "quark" at a fancy market, came home and could not bake with it as it had tons of salt in it, though the German Quark has none.
If you are looking to make German cheesecake, Jewish/Russian blintzes, Austrian Topfen knoedel recipes, this is it. You need a no salt grainy type product such as this. It tastes really good on its own anyway, as it's made with cultured grass-fed milk, so it's healthy .In the Midwest, it is at Woodman's grocery store for about $3.50 one pack less than even buying direct from Lifeway.

We loved it although it wasn't exactly what we expected. We were looking for a cheese you could slice similar to provolone.
