I do not do a lot of baking anymore but I do make muffins regularly. My home made baking powder was not providing much "rising power" for my gluten free muffins. Our local grocery stores do not carry aluminum free baking powder and I was happy to find it on Amazon.
It is imortant to me to have aluminum free b.p. The homemade mix provided only single rising and by the time the muffins got into the oven most of the rising (not a lot) was done and although they tasted fine, they weren't what they should have been.
The Rumford baking powder is double acting, and I'm happy now with muffins that rise considerably more than they did with my homemade baking powder mixture. Most of the time I use oat flour because I prefer the tender, smooth texture of the muffins more than when I was using rice flour, almond flour and one more G.f. flour blended together.
I can only guess that if you use 'regular flour' the results will be even better.
