essential in recipes; hard to find in stores

I use this stuff weekly in recipes and used to find it in grocery stores. Price shot up a few years ago and suddenly it disappeared from stores. Go figure. I don't care for the cubes as they don't dissolve evenly. These packets are simple to use - I may consider using the jar of powder IF someone can assure me that stuff doesn't compact into a hard lump over time.
