Your friends will enjoy the flavor of green tea as they eat these noodles so serve them with foods that are otherwise lightly seasoned.

The noodles stick together if they are cooked as noodles instead of in a broth. Using the soup recipe on the package, we found them quite good but perhaps we overcooked them when we served them as accompaniment to sauteed veggies.

We were happy that they had no added salt because it is not so easy to find condiments, e.g., soy sauce, that are low in salt.

Our family LOVES these noodles. We eat them cold, hot and everywhere in between.

I make soba sauce and it's much tastier than what you would buy, recipe is as follows...

1/2 cup soy sauce (Japanese is best)
1/2 cup mirin
1/4 sake
1 handful dried bonito flakes (I have small hands - xs gloves)

Put all ingredients in a pot (with lid) uncovered and bring to a boil

Remove from heat and cover

Let cool completely (at least 20 mins)

Strain and squeeze bonito flakes and refrigerate.

I put it in an old glass bottle and it keeps for at least a month probably longer but it doesn't last more than that at my house.
