the container is flimsy, so if you squeeze the sides even a bit, the cap is difficult to remove. spilled everywhere. other than that, good product

We are using this quite frequently for a number of cooking applications to boost emulsion and dispersion of ingredients. It just takes a little and this powdered form has been working quite well.

Soy lecithin is an emulsifier that has many uses. If you read nutrition labels, you'll see it in many foods. I love science but I'm not usually a fan of food science, but soy lecithin doesn't meet my criteria for Frankenfoods. It's a fairly natural food product. My killer application is EZ Caramel Corn. Homemade caramel corn is a treat but it was a bit too much trouble to make according to most recipes, so I used a little food science to make my own easier recipe. I add 1/2 cup of coconut oil to a stove top hand crank popcorn popper along with 1/2 teaspoon of Flavacol popcorn seasoning (available on Amazon), 1/4 teaspoon of lecithin, 1/2 cup of brown sugar and 1/2 cup of popping corn. Adjust the burner to medium or medium high, which will vary from one stove to another. If the mixture ever smokes, the heat is too high. Stir constantly until the popping rate falls to one popped kernel in two seconds and immediately dump the caramel corn into a large mixing bowl. The lecithin allows the caramel to more evenly coat the popcorn as it's popping, it allows the caramel corn to dump out of the popper without sticking, and it allows the caramel corn kernels to separate from each other as it cools. This saves me a lot of time, and I no longer need to soak hardened caramel from a stock pot and I don't need to wash a large cookie sheet that I previously used to cool and break apart the monolithic block of caramel popcorn. All I need to clean is the popper, and the lecithin even makes it easier to clean.
I enjoyed reading the other comments which taught me other uses for lecithin in the kitchen. I'll try lecithin in my next batch of bread, and I'd also be interested in homemade energy bars. I think I'll pass on the cannabis edibles though, but thanks for the tip all the same.

This is an amazing product that saved a batch of homemade face cream I was experimenting with. It had separated and refused to emulsify but I wasn't about to toss the whole thing with rather pricey ingredients and oils. I warmed the cream back up, added two teaspoons of this soy lecithin, and it instantly created the emulsion I was looking for. It did tint the cream slightly at first but the more I mixed, it lightened and disappeared. It's also good for homemade mayonnaise, something else that can break before it comes together. I consider this product my insurance policy, it really did save me a lot of money. Great stuff, highly recommended
