Great product. Easy to use, once you get the hang of it. What is important is the making sure you have the correct angle while sharpening. This three stone system is great.

I have worked in the meat department for almost 6 years and started as the apprentice. I have been thinking about getting my own knives and a stone set for about 2 years now. Why in the hell didn't I do this sooner? I got tired of getting knives shipped in from the company that sharpens them and sometimes they are not very sharp. Even if they are sharp we dull them pretty quick so once you get down to the end of the week it's terrible. Some cutters use them up fast so i'm stuck with knives that I have to work hard with just to get something done. Not anymore. Had this set for about a month now. Trial and error. Learn how to use it. I learned from an experienced cutter at the store. It is not hard just keep the angle the same. Clean knives, well oiled stone and listen to the sound it makes when you stroke the stone. Sounds nice and clean. Today I just used the coarse and then the steel. I usually use 2 or 3 of the stones. What matters however you do it is that everyday I have a very sharp knife which makes cutting large quantities of meat very easy and fast. So I went all in got this stone set and 5 knives. 2 boning. Once 12 inch but I don't like it and I knew better but it's all I could find in the 12 inch. It is too wide which is more drag resistance. I want a thinner blade. Height from bottom to top is what i'm talking about. So the other 2 are thinner 10 inch knives. Breaking knives cut a chuck or a ribeye just as good as a 12 inch knife. I leave this stone set at work. I will buy another one for the house but I will consider a different stone set just to see how well others work. I have done my research on this. So if you just need one 3 stone set this is the one to buy and it comes in a larger version but I think that is overkill. Hope this review helps and and info is welcome.

I took the advice from an experienced meat cutter who indicated that this was the setup he would buy for himself if he were in the market. It's exactly what I had hoped for.
