Need to learn how to sharpen it properly, but incredibly sharp edge on a great looking knife. Doesn't hold the edge as long as some of my cheaper knives, but that's to be expected as it's starting from a sharper starting point.

This bad boy is the cats pajamas. It's gorgeous from any angle, and the handle has the perfect shape. It is on the heavier side of some of my other pieces but I like that a lot. It's the right tool for most jobs!

I ordered the Sumo Santoku on sale for the smoking hot price of $140! This is the third Shun knife that I own and the first Premier. It is a thing of beauty and like all Shun knives it is wicked sharp. I'm not a professional cook, but consider myself a fairly accomplished home cook and this knife is my new "go to" for all my chopping needs, can thinly slice tomato's effortlessly. Hoping to someday complete my shun collection, the 6" Edo Utility and the classic paring along with this are almost all I really need but I will most likely add at least the bread knife at some point in time.
Any sharper and it'd be unusable

Beautiful knife, worth every single penny!! But be prepared for the yang in your yen here... Sure this thing is sharp. But you're going to have a hard time getting used to God-like sharpness! I'm always cutting huge hunks of my dish sponge and towels off when I hand wash it, it's so sharp. Also forget scraping food off the cutting board into your plate, pot or sink, without a monster shaving or hunk of the cutting board itself going too. I seriously think if I pressed hard to cut an animal bone, it would cut right through my countertop!! It's VERY VERY VERY sharp.

This is NOT a five star knife for all chefs. If you work in a professional kitchen this knife is not for you. If you're looking for the sharpest blade at this price point the Shun Premier Santoku is also not for you. The Shun Santoku is a functional piece of art, its delicate and refined. The blade is well balanced, but lightweight (especially if you compare it to the Wusthof Ikon series) and works perfectly for precision cuts on vegetables. This knife requires care, you should never put this knife on the dishwasher but rather wash it and dry it by hand each after each use.
