I discovered jerk chicken at Eva's Caribbean Kitchen in Laguna Beach and even today its difficult for me to order anything but Jerk Chicken, Steak, Pork, or Salmon whenever I go there. Through the years I've made my own jerk paste and marinated chicken and steak and it all turned out pretty well. When I accidentally stumbled on to this Jerk Marinade I was skeptical, however looking to achieve that unique jerk flavor without 2 hours of prep and 24 hours of marinade, I read the reviews and thought lets give this a go. I ordered the spicy and it is that for sure, but its delicious, a bit on the salty side, but not too bad. It makes getting a little jerk flavor quick & easy, the last batch of chicken I marinated I was running a bit low on marinade so I added a little apple cider vinegar & some spiced dark rum which also added to the flavor and mellowed out the bit from the Scotch bonnets. This is about as good as it gets when buying in a bottle!
