I've always like kraut, so I bought this at my co-op. I was gobsmacked at how delicious this was! It has finer shredding, but mostly, it is almost, kind of...sweet (not actually, but less harsh in some way.) It still has that great sour quality for sure, but it's mellow: like the difference between a bitter Brussels Sprout and a mellow, non-bitter one. Maybe it's where and how the cabbage is grown, or the higher quality, or traditional process used. In any case, I will never go back to whatever is labeled as sauerkraut here in the U.S. Nein!
