At a former job I sourced top quality sheep casings for a high end industrial sausage manufacturer. These are shorts, as described, but very high quality. Very clean and without holes. The lengths are appropriate for small batch/home use which is what I bought them for. Very satisfied! Also I got them very quickly. All around great product.

I read many reviews on these that complain about how short they are or they blow out. Maybe because I am new at making sausage links, that I didn't know what to expect but I figure with any casings you can have blow outs. As far as how short they are, well it says jus that on packaging and description, so if you complain maybe you should read. I was able to get them open without to much trouble and they worked out for me just fine. I will buy again. I made about 4 to 5 lbs of sausage withover half being links and still have plenty of casing left for more.

We had little problems with these casing and most of those could very well have been caused by us. They filled, twisted and dried well. The casing had a nice crunch when grilled. They arrived without any spoilage. The length of each casing was between 2 to 3ft. which worked out good for us since we're still experimenting with various recipes. 1 pound of meat would generally require 1-1/2 length of casing.

Item arrived quickly and in good condition. The casings are in a resealable zip pouch and packed in salt. Upon opening the bag, there were no off smells and the casing appeared to be in good condition and well packed. The way they are packed and salted made it easy to separate individual lengths of casing and reseal the unused portion in the ziplock bag to put in the refrigerator for storage. To prepare for use, I gently rinsed the and flushed casings in fresh water to remove as much salt as possible. I then transferred the casings to a small covered container with clean water and a touch of baking soda (1tsp baking soda per 1 quart of water) to soak over night in the refrigerator. Once the casings were fully re-hydrated, I loaded them onto the stuffing tube of my LEM 5lb sausage stuffer. The casings didn't go on the stuffing horn as smoothly as I would have liked due to the smaller diameter, but once I got the hang of it I was able to slide them on quite easily. It just takes a little practice. The casings are anywhere from 2ft-3ft sections with some being smaller and some being larger in diameter. While this makes it harder to make really long continuous rope of sausage, it has the benefit of making it easier to load on the stuffing horn as well as minimizing the chance of tangles or knots.

I had 2 blowouts early on due to inexperience with this size fresh casing, but once I got the hang of it I was able to stuff easily with no blowouts. I made links by pinching, twisting, looping and braiding into pairs of links. I stuffed 4 lengths of casing to test these smaller size casings out for breakfast sausage links with some remaining sausage meat from making cheddar beef brats.

For the unused lengths of casing that I re-hydrated, I rinsed them thoroughly with clean water, gently pat dry with a paper towel, packed them in a ziplock bag with 3-4 tbsp of salt, and put them in my refrigerator for storage.

This product comes with a decent amount of casings and per instructions makes approximately 15lbs of sausage per the manufacturer. However I expect this to be a conservative estimate based on my previous experience using casings from this seller.

After cooking the breakfast links, the casing had a very nice tender snappy bite with no off flavors. These are easy to use and are much better than man made collagen casings. Very happy with my purchase and I look forward to trying other sizes casing from this seller.
