Type K, most universal and cheapest probes around most industries. Weirdly my work is type J.
The probe that comes with it is plastic jacket so don't try to push it high on the temps. Fiberglass braid ones are cheap to find if you need a few more degrees of range.
I would say the probe is mostly for hvac and other temperatures below 200*f. I watched the EVblog tear down and was impressed with there detail on compensation on contacts for the probe. The blog can be found here https://youtu.be/0Pplmg9Seao
