I love these - there's almost always one in my freezer, mixed up and ready-to-go, and other packs in my pantry. They make great last-minute gifts, which is why I like to keep them on-hand. I've never had a problem with them setting up and like that I can take a wine that I don't really care for (we ended up with some REALLY dry whites) and make something out of it that I like.
These mixes are perfect when frozen in large silicone cube trays. Just pop a few out and enjoy!
