Never bought this stuff before but it was in MISO soup I recently enjoyed so I wanted the recipe and it called for Firm Silken Tofu. Well, I cant imagine what "soft" would be like because the firm I got has a very soft consistency. It's very smooth and breaks off easily. I think next time i'll order the Extra Firm. Anyway, I got the package that contained 12 of the 3oz packages. There is NO TASTE to it but it's suppose to pick up the flavor of what ever you cook it in. Carton says after opening....... refrigerate and use within 2 days. I would imagine if you took all the air out, you could keep it refrigerated a little longer. Anyway, the Tofu was very moist. I would buy this brand again, but like I said, I'll try the extra firm next time.

I used to buy soft ones, but they were more expensive and too soft for cooking, so I went for this Firm one. It is still silky and soft and good for putting into Miso soup, or for Chinese dish. I like the taste and texture also, a lot better than what I can find in the country where I live. Price wise, it is definitely better than purchasing soft kind, but if you go to Asian supermarket in your area (in the States), you can get them cheaper. I have found a box of 12 for $12.99 in the past on sale.

I love to have this stuff on hand; it needs no refrigeration and keeps for a long time. I also like the firmer tofu that comes in the refrigerated aisle of the supermarket (even though this is the firm kind, silken tofu is always softer), but this is great for scrambled tofu, cut up in veggie soup, mixed with cooked vegetables and vegan cheese (mmmm!), and will do for stir-fried veggies and tofu in a pinch. I've also read that you can use this in making vegan ice cream"” I'll have to try that!
