I've used it three times (once for hard cider and twice for fruit mead) and it's gotten fermentation going fast. Even using half a package is enough... and gets it so excited that I see my brews bubbling into my airlocks. This is a really good product. Seeing as it's been about a week, my brews aren't finished so I can't comment on the taste this creates.

The eleven packets are "forcing" me to brew eleven batches of mead. On batch number 5 now and found that the alcohol saturate level for this yeast is between 13.5% and 13.9%. <3 lbs of honey will produce a dry mead with the FG around 1.0 or less. Between 3-3.2 lbs will produce a semi-sweet with a FG around 1.02. 3.3 lbs of honey and above will produce a sweet mead with a FG above 1.02. Made a Cherry Melomel (sweet), Cyser (semi-sweet), an Orange Blossom Mead (dry), and a Blackberry Melomel (dry). Making a Mesquite Honey Mead this weekend.
