I was skeptical of all the commentary I read in the bread baking books about diastatic malt powder--thinking it was a bit of "snake oil" sales. Well, I was wrong. Adding this to my bread recipes, particularly those baked in the artisan style, really makes a difference in the crust texture and flavor. I usually mix the malt powder with my flour thoroughly before starting the recipe. It makes a subtle difference, but noticeable. If you are going to the extra work of creating a special artisan loaf, then I think this is a good addition.
