Expensive but outstanding. We have used many different brands of tehina -- this is vastly superior to what is available in our local grocery store. The texture is perfect - and the flavor is very clear. We used this for making tahini dip as well as a few recipes from the Zahav cookbook --- Halvah and Halvah shortbread cookies. This product costs about twice as much as what we get locally, but it is worth every penny.

The price falls into "this had better be really good!" range. Fortunately, it *is* really good.
If you've got the book, 2 bottles will make one big batch of tahini sauce, which in turn can be used to make 2 large batches of really great tasting hummus.

Soom is a light cream-colored tahini, which has a loose consistency, and is one of the smoothest-tasting available. It is best used in recipes where its pure flavor can shine through. There is no bitterness in this product as you often find in supermarket brands. I like to use it mostly in its raw form, i.e., in hummus, baba ganoush, and for tahini sauce, as well as just drizzling straight. For top-quality Ethiopian sesame seed tahini, this is the best deal on the market. You can spend more, but you don't really gain much in terms of quality, if you gain at all.

The reviews on this product were quite accurate. This is superior tahini. It is smooth and homogenized, unlike the stuff in the can marketed by Joya. The flavor is outstanding and it produces a wonderful taratoor (tahini) sauce. I will definitely buy it again.
Makes Great Israeli Hummus!

When it arrived, I tasted the tahini right out of the jar, and it is as good as the King Halva tahini I had in Tel Aviv. I made the most delicious hummus, using this tahini. My first time making good tahini! I was trying to get the light, fluffy texture and delicious, subtle flavor of the hummus I'd had in Tel Aviv, and it worked! Highly recommend Soom tahini!
Update: I tried 2 different brands of tahini that had high Amazon reviews. The other brands made good hummus ... but I ordered more Soom and was able to once again make GREAT hummus!
