I made tempeh with azuki beans and basmatti rice. At first the incubation wasn't warm enough, so it took 24 hours to ferment. I liked the taste. I boiled some pieces in orange juice, garlic with a little ginger, then added soy.
Fun to make, but may need some specialized tools

Be aware that you may need some specialized tools, particularly if you're in a cool environment. I use a sprouting heat mat with an external thermostat. The culture needs to be maintained in a fairly narrow temp range, about 85 to 91 degrees F. Also, it helps to have a dehydrator or a hair dryer to partially dry off the beans after they're cooked. I don't want to scare you. The process isn't difficult, especially if you live in a warm place. Making tempeh is actually quite fun!
