Smooth, crispy, mild-tasting Sunchokes.
Got a great crop the very first year.
We harvest them all winter long, leaving only a few to sprout in the spring for next year's growth.
I cannot believe how much eating sunchokes has improved my digestion (even miss eating them in the summer, once we've run out of the surplus harvest I blanched and froze for cooking later). Taking inulin supplements did nothing to help my digestion; only eating sunchokes helped.
These are MUCH easier to scrub than the knobby ones you'd get in the grocery store.
