Great value!! I use it mostly to make my own homemade chocolate syrup. Use Alton Brown's recipe for Cocoa Syrup at the Food Network.
1 1/2 cup water
3 cups sugar
1 1/2 cups Dutch-processed cocoa
1 T vanilla
1/4 t salt
2 T light corn syrup ( I use honey)
Bring water and sugar to a boil and wish in cocoa, vanilla, salt, and corn syrup(honey). Wisk until all of the solids have dissolved. Reduce sauce until slightly thickened. Sometimes I have to add slightly more water depending on how you want it. Only takes maybe 5 min or so to thicken. I put half in a easy pour container on my counter and put the other half in the ref. until the first half is gone. YUMMY

Let me preface this by saying I am a classically trained chef, and spent a significant part of my time as a pastry chef, so I tend to put products through their paces, driving them hard to evaluate performance. Rodelle Gourmet Baking Cocoa does more than simply pass muster, surpassing expectation. It's a superior addition to your baking arsenal. I just finished up my first container, which, because of its large size, took awhile.

Whereas it lacks the sophisticated finesse of Droste, it still packs an undisputed wallop of pure, smooth chocolate flavor. The color is properly dark. When I make brownies, they are as close to black as you can imagine. See the picture below, one of classic brownies, the second of Extreme Oreo Fudge brownies. In the first, you can see how light the chocolate chips are in contrast to the brownies. The chips are dark, bittersweet chocolate, so that gives you a point of color reference. In the second, the brownies are just about a color match of the Oreos.

The taste is full and conveys no trace of harshness or bitterness. Just rich flavor that hits all the requisite high notes and low notes which a well processed cocoa imparts.

Ideally, I'd use Droste for everything, as it's my hands-down favorite cocoa. That, however, would be cost prohibitive. I keep some Droste for direct kitchen-to-table products like frosting, mousse, ice cream or hot cocoa, where no baking will take place to mellow and meld flavor. Don't get me wrong; Rodelle will suit those purposes well, too. It's just a matter of taste preference for me. It is in baking, however, that you realize how brightly this product shines. When you factor in the price and the size of the container, as well as the sensory quality, this represents an unbeatable value.

For decadent brownies, cookies, and cakes that will make your reputation as a baker, this squat brown canister has a definite place in your pantry.

I can honestly say that dutch process is the best cocoa I have ever used in baking! I tried store brands after using up the whole jar of Rodelle and it was just terrible! I love it so much that I use the cocoa powder to make my own homemade chocolate milk with agave nectar. It is amazing! I even bought two jars this time because we use so much now. I feel great about purchasing from Rodelle because the cocoa is such high quality and they are a Fair Trade participant which likely means the beans were not harvested by child slaves. Win, win!

In my search for the perfect brownie I decided that the Hershey's cocoa powder at my local grocery just wasn't cutting it. So, based off the other reviews I ordered the Rodelle's Gourmet Baking Cocoa. When it came in I realized that I had ordered a much larger container than I thought, I don't read product descriptions as carefully as I should. At the time I thought it would take me forever to use that much cocoa powder. Then I noticed a brownie recipe on the side.......it makes by far the BEST BROWNIES I HAVE EVER HAD!

Everything I've made with cocoa powder has come out better sense switching to Rodelle's. You can tell from the second you open the top and are hit with that rich chocolaty smell that this is now ordinary cocoa.Now I find myself reordering more to keep up with my family's growing brownie addiction. This time I think I'm also going to try Rodelle's vanilla extract to see if it's as game changing when it comes to my baking.
