The flavor is great and the wafers melt into a smooth coating. I've had lots of trouble with regular white chocolate (which isn't really chocolate) seizing no matter how carefully it's handled and melted. Not so the Ghiradelli brand wafers. Whether used as a coating or sauce or as an ingredient in cookies, brownies, or biscotti, to me they're worth the extra cost.
