My old standby raspberry wine vinegar is no longer available and this one surprised me with it's great, light raspberry flavor it added to my dressings and sauces. It's my new favorite.

Simply wonderful, This tastes like the sour wild mountain raspberry's that grew along side the logging roads in The Snowy Range West of Laramie, Wyoming. These delicious little flavor bombs grow at 10,000+ feet in altitude. They make the raspberry jam of the Gods. The Cholavita Raspberry Wine vinegar tastes and smells like those little red raspberry's. I added some, along with Cholvita Greek Olive oil on an JJ's Unwich and I felt like the food judges on the Japanese Anime Shokugeki no Soma ( Food Wars! ). I cannot wait to try this on Fish-n-Chips. Add this too a Kansas City style BBQ sauce.

When we started getting lots of beautiful delicate greens in our CSA half-bushel each week, we realized just how great each single leaf tasted. I took a tip from this cookbook, Six Seasons: A New Way with Vegetables . We now dress our greens with just a drizzle of olive oil and vinegar and a faint dusting of salt, maybe pepper, maybe not. And we mix gently with our fingers. So these minimal flavorings must be top-quality. We already have a collection of finishing salts and great olive oils, and I use the freshest Tellicherry pepper that we grind. I invested in Katz vinegars and found them to be wonderful (and expensive). The Katz vinegars whetted our tastes for more. And my pantry now has a dedicated more-than-two-square-feet for vinegars: American, European, Mid-Eastern and Asian.

How could I resist this Raspberry Red Wine Vinegar and the Prosecco White Wine Vinegar from Colavita? Especially after trying--and greatly appreciating--Colavita's Aged White Wine Vinegar. None of the Colavita vinegars have disappointed. They have all been great. And I look forward to pairing a vinegar with the greens and with our main dish. It is a lot of fun--and rewarding. It also makes us more apt to actually t-a-s-t-e our greens. And I must say: These specialty vinegars from Colavita compare very favorably with the expensive Katz offerings. (Katz is not sold on Amazon, so you have to investigate that on your own.)

This Raspberry Red Wine is a touch fruity and a touch sweet; even considering its 6% acidity. And the raspberry really comes through, and it is a real, natural, not imitation, flavor. Can't wait to try it with raspberries when they come into season next year.

Almost at the same time I ordered this Raspberry, I was offered one of the other Colavita vinegars on this product page: The Prosecco White. It was offered to me through the Amazon Vine Program. It is also a great choice, full-flavored and a touch sweet. And surprisingly smooth for its 6% acidity. It is great as a dressing for delicate greens.

I especially love the Prosecco in a simple Yukon Gold potato salad: I boil a few potatoes in their skins until tender. Then let them boil a few more minutes so that they soften a bit. I lift them with tongs into a amply-sized bowl. I do not rinse them in cold water. I struggle to peel them as soon as I can handle their heat (usually before then if I use gloves or a cloth). I want them as hot as possible, so they absorb more vinegar. I chunk them into 1 1/2" pieces--some pieces smaller than that. I add a few glugs of vinegar, gently mixing and flipping with a spatula until the potato pieces absorb the vinegar. I add more sparingly until it seems the potatoes will take no more. Then I add a few glugs of olive oil and continue turning. A cream, an emulsification, develops. Salt and pepper and done. I serve it at room temp. Better than a baked potato!

Being offered the Prosecco is what drew me to this product page, which prompted me to order the Raspberry. I must comment that the Prosecco, and the Aged White (from another product page) came packaged in Amazon's frustration-free packaging as stated on the product page. The Raspberry? It came from Walmart. Seeing the package from Walmart was disconcerting to say the least.....I never order from Walmart, as Amazon's guarantees and customer service are familiar to me and comfortable for me. The Raspberry did not come in frustration-free packaging.

The flavor is more complex than plain white wine vinegar. i always experiment with flavored and other styles of vinegar, since I love salads. This is a good one, as is the Colavita Champagne vinegar. Plain white wine vinegar is too blah for me.
