Chinese style vegetable knife

The knife is nicely made and looks good. It only has a bevel on one side, which I knew in advance, but I am not use to it yet. The knife has a strange balance (unbalance) to me when I am holding it. I am sure I will get used to it in the future.

The single bevel "guides" the direction of the cut..To make a vertical cut, the knife has to be "guided"...it will cut on an angle otherwise...I ground and sharpened mine to a double bevel and it is now one of my favorites.

This has become my go to knife. I use it for nearly everything. It's proven itself durable and easy to care for. And, because of the single bevel, sharpening the edge is super simple.
More than anything, the ergonomics are just fantastic. It's well weighted, and when held correctly, very comfortable. For most tasks, I hold the knife steady by firmly pinching the base of the spine with my thumb an index finger, while using the rest of my fingers and palm to grip the actual handle. This technique was taught to me by a Japanese chef who first introduced me to usuba style knives. This simple change in grip, along with this knife, have made me much more adept in my everyday slicing, chopping and hacking.
So, the knife is durable, easy to sharpen and it's reasonably priced. It's nearly perfect. My one small complaint is the handle is a little too smooth. A little bit of texture would be appreciated. But even with that critique it's a five star knife.
