The world's most perfect knives

I now own a whole collection of Zelite knives, and can unequivocally say that they are the best knives I've ever owned and used. This executive-plus series chef knife is no exception. It's like a highly-functioning piece of art with heft, balance, stunning beauty, and razor-sharpness. Like all of the knives in the Zelite line, it grips the food that I cut, so the knife is far less likely to slip if I'm cutting something that doesn't have a flat surface (I'm looking at you, pesky carrots), which means that I'm less likely to cut myself. One of the things that sold me on this new knife is that it comes with a high-quality protective leather sheath that snaps securely on. With such a sharp knife, I like having that added security. It also makes it much safer and easier to transport to summer BBQs where someone always brings a watermelon, but forgets to bring a knife. I usually have to fashion a makeshift sheath out of a paper towel tube and some rubber bands, but now I'm headed into summer armed like a ninja. Thank you, Zelite, for making the world a better place, one perfect knife at a time.

I waited a few months to review this, as I typically do. This is, hands down, the finest Chef's knife I have ever owned. I purchased the 10" version, because the price point was great when looking at both the 8 and 10. I will purchase the 8" whenever I can do so, and I will say that either knife is well worth the money. The 10" version is a 'weighted knife' meaning that the weight is around 60/40 % balance favoring the blade. This is by design, and offers excellent action when chopping. From what I see on other reviews, the 8" knife is perfectly balanced at a 50/50%. The profile of the handle fits amazing to the human hand. I have used it in my daily cooking for 3 months now, and have never once felt any remorse in ownership. True to their word, Zelite has delivered a gorgeous, 12 degree Japanese style knife that comes out of the box sharp enough to split molecules. I have only honed it once, but not because it was feeling dull, but because it made me feel better. One should treat the knife with respect, as it will cut you in a heartbeat if you are not paying attention while hand washing it, or prepping food after 4 or 9 beers. The Damascus pattern on the knife is beautiful, as well as the packaging it comes in, which you can find plenty of videos online showing this. You will not regret owning this knife!

I really didn't need this knife as I have a number of other premium quality 8" and 6" chef's knives, all excellent in every way. However, I have been VERY impressed with the other Zelite knives that I've bought over the years--they are my favorite knives--great quality, hardness, sharpness and handling, as well as being beautiful. So, after lusting after this knife for a year, I finally couldn't take it any more--I bought one, and boy am I glad I did. Fantastic knife!!! Very sharp, great handling, beautiful, with a nice wide blade. No regrets!!!

So, I went to every knife company looking for what I wanted. I almost decided to go German but went to this company just to see.
I went for the 10" Plus and received the Knife in two days.
I went to work- I was totally amazed and I am SO glad that I did. After 35 yrs. using knives, ( mostly German and a few Japanese), BLEW me away.
This knife is for many uses, but in production - I do not own one with this capability.
OK. I could go on but I believe if anyone that is where I am in the culinary field uses this knife WILL see what I have seen.
I will be a Zelite customer from now on
