I'm actually not really a soup person. Every once in a while I'll crave some (but that's usually just about my own homemade turkey soup).
But this - this soup is quite delicious!! So special! Like something you would enjoy on a very pricey cruise fancy dining night (most soups I've ever really liked have been special cruise soups). But this comes in convenient box, is organic, and truly yummy.
It's wonderfully thick and smooth. The flavors blend beautifully, yet each stands out individually, so you get to go on a flavor journey with each spoonful (not kidding... yes, really that good).
It is the perfect soup to whip up for someone whos not feeling too well. This is how I ended up finally tasting it tonight. I'd bought the box one day when I scrolled past the words cashew and ginger. Enter sound of screaching tires, and I scrolled back and peeked at this soup, and then threw it in my cart.
Today I was very ill for most of the day. As evening arrived, I knew I had to try to eat something. A friend suggested I see if I could hold down some soup. Soup... oh right... people eat soup when they are sick. Well it was the perfect food, the perfect time, and though I certainly didn't expect to thoroughly enjoy myself with the little half cup I heated up in the microwave - I was so pleased with the taste, the feel, the lovely creamy warmth, that I've been tempted to heat up another half cup. I don't want to push it though. I'll definitely eat more tomorrow.
Also, I can see so many uses for this in other dishes! I'm so glad I tried it.

This soup is soooo yummy I'm sorry I haven't been ordering it for years but really happy I finally did because it's fantastic. It's perfectly spiced. The little bit of heat from the ginger is just right. I ate this on a cloud dreary chilly day and it was lovely. The carrots lend some sweetness and the cashews give richness and lend some complexity to this wonderful soup. I love a lot of the Pacific soups this is now one of my two very favorites.

This soup is SO damn good: a little spicy, a lot wholesome in that it makes me feel like everything's gonna be ok.
I went through 12 weeks of chemo, 4 years ago, and this soup was one of the very few things that I could eat, without getting sick, when nothing tasted good.
I'll always love this soup, especially for that reason.
I like to add a lot of chopped, raw radishes for extra spice, and diced, raw cabbage to the soup, to slightly mimic noodles, to make me more full, otherwise, I'd end up just sipping the entire container, since it has no other add-ins.
Buy this for yourself or someone you might know that's going through chemotherapy.
