I wouldn't lie and tell you these are bad just to keep them all for me. It's not like I'm some Okie transplant up here in the Northeast where it's hard to find good catfish or anything.
Or that catfish was my mom's favorite food and she made sure that her kids learned to appreciate it in spite of having to move all around the country.
Or that as far as I am concerned, catfish is better than lobster.
Or that this particular catfish arrived in perfect condition, with large fillets that were firm and not smelly.
Or that it cooked up white and flakey and not one bit mealy.
Nope.
Can't be that.
