I'm a high school physics teacher, so I bought one of these for our chapter on electricity and electronics. My students never enjoyed anything as much as they enjoyed the makey makey. We made a graphite controller for pac man like they show in the video. Very fun and very educational.
The kids in class would always be trying to come up with different things we could do with it, and it turns out that the cheese sticks they get at lunch make a perfect material to connect it to! One of the kids in class who can play the piano played it using the cheese sticks and we made a video that we used to promote our science demonstration show. It was a huge hit.
We also went to the elementary school and did a few activities with it. Imagine hooking a a group of 2nd graders up to this and making them the keys for the piano. Just have one kid hold the ground and they can touch the other kids on the hand to play the piano. It blows their mind and they go crazy about it and want to learn how it works.
What you can do with this is only limited by your imagination.

One hour in, and this is a WOW! I debuted it with four teen-age girls having a slumber party, and they were engaged and impressed. It's certainly science/engineering in action. I heard several say they want it for Christmas. That said, it remains to be seen whether this will have any staying power -- I'll try to report back and see if this stays in the rotation or gathers dust.
The product is easy to use right out of the box, except for one thing: I'm on a Mac, and I got a weird error message about how it couldn't detect the keyboard (it sees the Makey Makey as a keyboard). The instructions and MM site were no help, but somebody said on a blog just to ignore that message, which I did, with success.
Last thing, and I feel bad even saying this, but it comes in such a small box that it seems to be of less value than it actually is. I hate gigantic, unnecessary packaging, but on the other hand, the small box suggests that it is an item of less value. BTW, I bought the kit on sale for $40. The list price says $70. I felt good about paying $40, but glad I didn't pay $70.
