Good quality / no instruction sheet

I bought one of these to see how I like it ... quality and does it fit in my cooler. Seems to be good quality. Cans slide very nicely. Good fit. It seems like it will work nicely so I bought another one (and if it holds up over some time, I will get a third).
But I do have a question that could have been answered with a simple instruction sheet (or have something on your website): do the break offs actually break off by hand or do you have to cut them? The quality is good and they don't seem to want to simply break and I didn't want to force it. I can cut but was curious if I was doing something wrong. And it also came with some white plastic clips that I have no idea that they are for. Can you please let me know?
