When my mother made macaroni & cheese, she used longhorn Colby cheese that melted into the macaroni. It tasted far better than the recipes that use a cheese sauce. I use a similar recipe. Unfortunately has become very difficult to find longhorn cheese locally. This Colby worked great and is far better quality than the supermarket variety. I like the fact that the small chunks of cheese melted into the macaroni so I could taste both the cheese and the macaroni in each bite.
The order arrived exactly as promised. The half loaf was a lot more than I needed, but I have been snacking on the loaf, so it will be consumed very quickly. I am looking forward to making some more mac & cheese with this cheese.
