People don't know how good brick cheese is. Most people think "brick" just means a block of cheese and don't realize it's a super, mild, GREAT melting, lovely cheese. I can't get it on the west coast anywhere. So you have to have it shipped from Wisconsin! This company shipped reasonably, packed to keep cool, and 2 pounds is a very good amount. I plan to order regularly. Very very happy.

Cheese is very good and worth the high cost. $20+ in shipping is pretty steep, but it is necessary in order to be able to keep the cheese refrigerated to a safe temp. Followed along with J. Kenji López-Alt's excellent recipe and have made many pizzas using this brand's Brick cheese to consistently rave reviews. Highly recommend. I would also suggest checking out out the seller's website for slightly lower prices (though maybe it's worth paying a bit more for the convenience of staying on Amazon).

I ordered this after watching a cooking video about Detroit Pan Pizza. It's impossible to find here in Arizona. The shipping was great! The cheese arrived cold and when I made the pizza, everyone raved about the flavor and texture of this cheese. It almost reminded me of cheese curds, but gooey, just right salty and the melt on the pizza, especially on the edges was out of this world! Definitely worth the treat and nothing else would work as well on Detroit pizza!
