I used the cornmeal for a couple of recipes, one was a pork and hominy stew and then a cornbread recipe that was on the package. Both recipes were delicious. The coarse ground corn tastes fresh and gives a coarser texture to the cornbread and more substance to the sauce for the stew. I will use this product again for these recipes.

We have been baking cornbread on a regular basis since COVID-19 restrictions started, and I have tried several brands of corn meal because we could not buy a single brand consistently from Amazon at first. We like more country-style cornbread (single egg, little or no sugar), so it's important that the corn meal itself have good flavor and good texture. During this past year, I've baked with Aunt Jemima yellow corn meal, a pricey Kentucky boutique brand corn meal, and some Amish grocery bulk-packed (not from Amazon) cornmeal. All were good, but this Iberia brand is really satisfying as to flavor, which is fresh and "corny", and texture, which is crunchy, because it's made from a course ground meal. Tonight's cornbread wowed me when it came out of the oven. It's for morning breakfast, but I had to try it out at midnight to make sure it's good. It really is. If you like texture in your cornbread, this Iberia brand will not be shy, if you like flavor, you are going to be thrilled with your baking results.

Excellent product

I really like the coarse grind of this cornmeal! I've found it makes an excellent breakfast. So far I've only used it to eat as a porridge and as a lubricant when I bake bread, (I place it under the bread to keep it from sticking to the baking stone and the peel. I imagine if I were to use cornmeal in a recipe for baking or in one as an additional ingredient I'd use a finer grind, but it definitely meets my need. I would've given it a five star rating but I'm no expert on the flavor of corn meal. It certainly tastes fine to me. I highly recommend it.
