I made an 8x8 lasagne and needed two packages (with three "˜noodles' left over). There are 23 in a package, so you will be short pretty much no matter what, so short your bottom layer. I boiled them first so they would be softer (directions said 5-10 minutes, so I went with 7.5) and I still couldn't cut the noodles with a fork. The lasagne tasted good though, so I will try boiling the palmini longer next time, and maybe baking it longer on a lower temp.

I love these . The texture is different than noodles but when put together in a lasagna the taste is great. Considering the trade off in calories, these are a hit in my house. I preferred when they were packaged in cans rather than these pouches though, too hard to store in my cabinets.
