These truffles contain a woodsy aroma with flavors of garlic, wild mushroom and earthy hazlenut undertones. Their rough alligator skin-like surface is near black, with a pale colored flesh and beautiful white marbling.
• •COMPLIMENT YOUR DISH: Summer truffles are more subtle than their winter counterparts. They can be shaved fresh as a finishing element or infused into sauces to add depth and complexity. Fats are great for capturing these aromas - and we recommend avoiding intense heat to maintain the integrity of the distinct flavor and aroma. Use as a complement to high quality truffle salt, truffle oil or truffle butter for robust truffle aroma and flavor.

The Black Summer truffle will be perfect with lobster, caviar, foie gras, pasta, creamy sauces, brocollini, garlic, shallots, light-bodied vinegars, aged cheeses, citrus and herbs such as terragon and basil. Also pairs well with arugala! Be sure to use as a complement to truffle salt, butter or oil for maximum truffle aroma and flavor.
• •HOW TO USE: Open immediately and put in the freezer until ready to use. Allow to defrost for 10 minutes before preparing. Shave, chop or grate per recipe.
