I usually buy a lot of eggs and forget that I have them so they end up going bad, but I decided to try this out as it has a year shelf life and they taste just like regular scrambled eggs. If you didn't know someone used powdered egg mix to make you an omelet or scrambled eggs you wouldn't tell the difference. It all matters on how you mix them they might be powdery. Also if you make some for someone else and tell them that it's powdered eggs, it might be in their heads to say that they are powdery. I think they taste great and very easy to make.

Egg whites are suppose to be a good source of Albumin which I need to help get rid of my edema. Didn't want to eat so many real eggs. Powder is hard to get into solution & seems a bit salty. Hoping that pasteurization doesn't harm the Albumin.

With the price of eggs right now, I thought I would save some money by purchasing something that would be shelf stable and do the same job. Note: I have only used these in baking and have not tried/tasted them alone (like scrambled eggs). My baked goods come out with no difference so I do think it is a good buy. However, I did notice that the expiration date was 6 months after the date that I ordered. I know that freeze dried eggs can last for more than 10 years, so it is a little frustrating that these have been sitting on the shelf so long that I am only getting them a few months prior to expiration. Looks like lots more baking is in my future.
