Folks, there are three ways that I know of to preserve sun-dried tomatoes: sulfur, oil and salt.
Yes, these are a bit salty- if you don't follow the directions to soak them in water. I find salt to be the least worst option when it comes to preserving dried tomatoes.
If you live alone and don't mind your "gas" to smell like rotten eggs (yes, this is true Google it) then go ahead and just buy the ones preserved in sulfur dioxide. If you are not watching your cholesterol or weight- fire away, and buy the oil preserved ones

As is traditional, these sun-dried tomatoes are preserved in salt, which is why they are salty! I insist on salt instead of chemicals, which is what most packagers use. You can eat them out of hand (as part of a cheese or meat board), add them to recipes as they are and reduce the salt in your recipe, or prepare them the way I was taught in Sicily. To prepare these tomatoes: soak the amount you'll use over the next 2-3 weeks in a mixture of 25% white vinegar and 75% hot water a few minutes off the boil. Soak for 30 minutes. Remove tomatoes and let dry (I use a tea/kitchen towel). Then I store them in a clean glass jar in the fridge. I keep the dried ones I haven't reconstituted yet in a glass jar in the pantry.
