Simple ingredients and a perfect roasted taste.

The media could not be loaded. Simple and flavorful roasted whole eggplant slices found tucked away tastefully in sunflower oil. I enjoyed the natural flavor of this eggplant and just rolled the slices up and placed them ontop of breaded chicken parmesan. I used a pungent fontinella cheese for this dish that blended wonderfully with the roasted aspect of this eggplant. I simply placed the chicken with eggplant under the broiler for about 5 minutes. The fact the eggplant is sliced in large pieces makes it easy to be creative with cooking and by charing these rolled up pieces, the flavors really stood out but yet remained peaceful with their natural juices.

It was really good! Plain, right out of the jar, they are a bit tart, but still creamy (which worked well with the bruschetta. It was totally delish!). It's a very refreshing flavor and didn't feel oily when I ate them, even though they were soaked in sunflower oil. They are surprisingly firm and didn't fall apart (lovely texture). What was really surprising was that there were only three pieces in the whole jar! They are really huge pieces (about five inches long and three-ish wide) that are folded and rolled to fit in the jar. We used one for the bruschetta you see in the picture and I put the rest in a deep dish pizza for dinner. I cut it into strips. It really goes with tomato sauce :) I loved it.
