OK, I admit that I had a very hard time determining the right amount of batter per cookie but once I did, wow. The cookies are incredible! I used the recipe in the provided book and they are the bomb. Buttery, light, crispy perfection. I'm going to make some in a saddle shape and fill them with cream and ricotta next time.
As a tip, I used Watkins baking vanilla and the flavor really comes through. I'm totally hooked.
The machine works great and the time is fairly forgiving. 1 minute or two is fine, after that, they get a bit dark. So, even if they seem too light, they crisp up and are perfect every time. Start with less batter than you think you need---1 teaspoon to start. Use two spoons, one to scoop and the other to scrape the batter from the spoon. It's very sticky batter.
Another tip: Lock the handle during baking as it forces the pizzelles to be thin.
Be sure to let the melted butter cool before adding it. If you follow the directions in the provided booklet, you'll get perfect, crisp, thin, buttery pizzelles.

I have used the basic recipe, however, using a waffle cone mix also available on Amazon, you can make quick and easy cookies using just the mix and water. I use 1 1/3 cup mix to 5oz water. Will look like a cake batter. You do not want it too thin. Spoon in about 2 tlb batter in center. Experiment to get the right size. Close lid and cook about 3 minutes. I have the non stick model and do not need any oil on pizzele area. I started with this company's single unit and really liked it, however the double cuts time in half. Dust with powder sugar as soon as you remove. You can also use melting chocolate and drizzle over the cookies when all are cooked. You can dress them up by using sprinkles on melting chocolate while still warm. I use rainbow sprinkles also from Amazon. Have fun experimenting and give the waffle cone mix a try. Delish!
