What a flavor enhancer this has turned out to be! I make almond biscotti quite regularly and never had good enough flavor to satisfy me. This purchase has changed that, the flavor is excellent though some learning is necessary to use the appropriate amount. It is well worth another batch of cookies to get it right!

Watch out when you measure this. It is much more potent than other almond flavoring and can easily overwhelm all other flavors if measured the same as other almond flavorings and oils. Start with 1/4 and adjust upward. It gives that definite high quality almond note to pastry and candy, but a drop too much and you can ruin it. I used this in a homemade marzipan recipe. It dominated the natural almond flavor so much that I had to wonder why I spent so much time skinning and pulverizing real almonds. I used thin sheets of the marzipan for pastry and it crowded out all of the complex and expensive ingredient flavors. Superior to other almond flavorings I have tried over the years.

This is actually Bitter Almond Oil which is exactly what my recipe called for. Almond Cloud cookies need this. It is not Bitter it is just a strong Almond flavoring.
