I like this even more than I had expected. I was replacing a different kind of boning knife and thought I would miss the size of my old one, but this one turns out to be very comfortable to use, just the right size for many tasks, and removes the skin off chicken and the fat off red meat very easily. It does other things well too.

Butchered 45 chickens yesterday. This was my go to knife for everything!...cutting feet off, opening the gut cavety and even cut the necks. I wouldnt suggest it for neck cutting but it worked well. I only sharpened once in 45 chickens, im cutting on a plastic cutting board.

Such a killer blade for the money. The grip on the handle is top-notch and fat enough to prevent hand fatigue if you're doing a lot of cutting. I bought it primarily for trout, and this will rip through 5-6 large trout before feeling like I should knock it down with the steel. I like that the blade is flexible, but not overly flexible; just enough to follow the contour Works well to butterfly chicken breast - like a hot knife through butter. I just wish it came with a sheath - I'm running out of room in my knife block.

I use this for filleting fish and it's a nice knife that does the job. My only complaint is that it doesn't really keep its edge for long and I can't get through cleaning and filleting more than one or two fish at a time before I have to run it over the sharpener. I keep it in a leather sheath in my tackle box so I'm not sure what else to do. Once it's sharp though it works great.
Takes and holds a sharp edge.

Great value for the price. Bought it on the recommendation of Scott Rae in his series of youtube vidoes on butchery, and he was 100% correct especially for a $25 knife it's an excellent knife, takes a good sharp edge easily and holds an edge well. The blade shape and flexibility of the blade make it easy to get clean cuts in tight spots on a carcass, within it's intended role it's become a favorite of mine.
