Minute Rice is good if you want rice cooked fast and perfect without a rice cooker. It's pretty good rice & I think they even make flavored options too. I like the fact that it's ready quickly & I don't have to worry about undercooked rice ruining the meal. There's even a recipe for rice pudding with minute rice online! Good stuff! I got the big box because we eat it often & it sells for a pretty good price on Amazon.

I have been trying to add rice and beans to my diet. I read recently that "any grain plus any legume equals a complete protein". One of the major challenges of eating a meatless meal is the need for a complete protein. Grains and legumes separately only have some of the necessary amino acids, but rice and beans together becomes a complete protein. I am not good at cooking rice, but this minute rice is easier for me. Hopefully, this will make it easier to add the standard rice and beans meal to my diet.
