Everybody thinks I have some secret to my family's favorite pumpkin pie. This is my secret. Seriously! It's just a normal recipe. ...and no, I'm not going through all the trouble of scraping, shaving, cutting and roasting my own pumpkin when Libbys is SO GOOD! I make own pumpkin spice latte with it too. Bring 2 cups of milk to a boil on medium with 2 heaping tablespoons of Libby's Pumpkin Pie Mix and 4 Tablespoons of sugar. Throw in 2 tablespoons of vanilla extract when it's done and hit it with the blender for 10 seconds--with the lid on tight! Mix half and half, the pumpkin spice milk with strong coffee--makes 2 large cups. So good! Now you know what to do with the rest of the 30-oz can when you make your pumpkin pie! Plus you just saved on your Starbuck's bill. Libby's Pumpkin Pie Mix is the only pumpkin I will use. The spice mixture is spot-on--so flavorful.

Honestly when you're busy in the kitchen for the holidays, a quick anything dish is a life saver. This mix just needs a can of evaporated milk and two eggs to be mixed together and then dumped into a pie crust. Friends and family both loved the pie and it was devoured.

My husband accidentally bought this stuff at the store instead of a can of regular pumpkin for my Thanksgiving pie. Never send a man to do a woman's job. I didn't realize that's what he bought until it was too late because the label is very similar to the "regular" canned pumpkin label. I guess this is okay for people who can't manage to add their own sugar and spices to a can of pumpkin, but I didn't like the recipe. It was too sweet and too spicy. I'd rather make my own. It's certainly convenient, but honestly, pumpkin pie is the easiest thing to make. I am stunned that it comes this way. I guess people will pay for ANYTHING these days.

avoiding gluten these days...so decided to just make up the filling and fill the pie tin and a small bowl with it and cook it up in oven...its now my favorite dessert..toss a lil Reddi wip on it after its cooked and cooled and a dessrt is born
