This makes an excellent polenta in a very short cooking time. Make sure your water is rapidly boiling, start stirring BEFORE you drizzle in the polenta, unless you like lumps of uncooked grain. But, if you like lumps (I don't mind, and sometimes I don't stir fast enough) you can cover the pot and let it stand and the grain will continue cooking.
It is good right after it is cooked, but it is GREAT the next day after refrigeration overnight. Then, the polenta can be cut into cubes, drizzled with olive oil and microwaved. I, then, squeeze some lemon juice over it and sprinkle with some Fleur de Sel. Terrific breakfast, holds me until lunch!

This must be quick polenta cause this cooks in no time! The grain is also good to use for cornbread and any other corn meal-based recipe. You can't beat the price and quality of this product.

Using this for backpacking dinners. 3oz polenta, 1oz instant potatoes, .75 oz parmesan cheese, .5 oz powdered butter, .5oz powdered milk, 1oz bacon bits or freeze dried mushrooms for a delicious 6.75 oz meal with carbs fat and protein.
