I purchased these oxygen absorbers to place in 2-3 gallon buckets with dried foods. The size is correct for what I am doing. In fact, these are a little bit larger than I actually need for some of the foods. I like that they are packaged in 2 bags so half of them remain completely unopened while I have opened and vacuum sealed the bag I am using as I need them. I find that the OxyEye included in the bags has been helpful for me to know that my oxygen absorbers are resealed properly. I only wish there was something like this that would confirm that my food is in an oxygen free environment. I guess what I am saying here is that a certain amount of this purchase is trust.

I'm new to doing this, so for anyone else storing food for the first time, I'm going to share my process with you very briefly. I got icing containers from the bakery in the local grocery store. The lids on these seal very tightly and the buckets are food grade. (It doesn't hurt that I get the bakery to give them to me for free.) I run them in my dishwasher with hot water and heat drying to make sure we get them thoroughly clean. After they are bone dry, I fill them with dry goods leaving only about an inch of space at the top of the bucket. I toss in an oxygen absorber and seal the bucket. It then goes into my deep freezer for 3 days to kill off any larvae that may have been in the dried goods. The buckets are then stored away.

I'm sure the big question here is "How do you know the oxygen absorbers are really removing the oxygen?" After researching on the internet I found that they are supposed to get warm when they are absorbing the oxygen. I held one in my hand long enough to verify that this is the case. I also read that when the oxygen has been completely removed, I might notice that my bucket is bulging just a little bit and not to worry about that. Well, my buckets are bulging on the lid just a little bit, so I am trusting that my food is safely preserved.

I'm giving these absorbers 4 stars because, like I mentioned above, there is a matter of trust involved here. I shared why I believe they are working properly, but I actually have no way to be certain. When the time comes to open up my buckets of food, I suppose I will find out then. In the meantime, everything seems to be just fine and I'm going with the 4 star rating.
