I rarely buy fresh lemons because I don't use them often enough, but I occasionally make a recipe that calls for lemon zest (peel) so I thought about using dried lemon peel to see if it worked. I used these in a made from scratch lemon pudding. I was very pleased how it turned out. I look forward to using them in some other recipes for sweet or even savory foods.

It's best for people to know the difference. Rind is very bitter. It's best to grab a bunch of lemons, a microscale, and make zest (yellow, not white). This would make a nice cleaning product or repellent. If you have glycerin capsules, you can ingest it that way to get the typical vitamins and antioxidants from peels.
