I had high hope to use this to fill the cavities of many silicon molds. Even though it is a skimmer with the lowest speed setting, still to me there is a lot of chocolate dispensing at one time. I tried to use the speed dial to stop the dispensing but because of the current design, it's not like a water tap shutting off immediately and there is still a lot of chocolate pouring down. So I used a spoon to collect the chocolate first and then transfer it into each mold cavity. I figure that I can just use the spoon directly to scoop up the chocolate, at least I don't have to clean the skimmer afterwards. Because of the way chocolate is leaving the tempering bowl traveling upwards and down, the chocolate will crystallize faster and I have to remelt the chocolate and let it temper again. Overall it's a nice and affordable design. Expect that the plastic belt has to be replaced because of the constant circular move. If you stop the move for too long, the chocolate will solidify which makes it harder to restart again.
