Outstanding, remarkable, delicious. The perfect combination of flavor and texture. Very fresh, not too sharp, not too sweet and not at all stale or hard. The first time I've been able to eat candied ginger by itself and like it. So I went straight from not liking it to absolutely loving it.
My wife makes some serious foods with candied ginger. My new favorite is gibassier with candied lemon peel and crushed anise and ginger; but the combo of candied ginger and lemon curd on her homemade English muffins is so good that I could seriously opt to eat that for every meal. The problem has been that any ginger we got was simply not up to the standard of her baking and all of the other ingredients. This took her food to a whole new level. If this were very expensive, we'd still buy it.
The texture and taste of the two kinds of ginger in this order are different. One is perfect for eating straight due to the light texture and taste, complex but not overbearing. The other is perfect for mincing into bits for baking, more dense and strongly flavored, yet not a bitter or stinging taste.

I'm a ginger addict. I've purchased several brands both locally and on Amazon, and have found this brand superior for baking, snacking, smoothie additive...etc. They choose the best age and textured ginger to make crystallized ginger. Other brands that I've tried are excellent for teas, but are far too fibrous for snacking or confections. I highly recommend this product.
